How to Make Fresh Pasta

Making fresh pasta is a fun and rewarding experience. It's also not as difficult as you might think. With just a few simple ingredients and some basic kitchen tools, you can make fresh pasta at home that is better than anything you can buy in the store.

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup semolina flour
  • 3 large eggs
  • 1 teaspoon salt

Instructions:

  1. In a large bowl, whisk together the all-purpose flour and semolina flour.
  2. Make a well in the center of the flour mixture and add the eggs and salt.
  3. Using a fork, slowly whisk the eggs into the flour mixture, incorporating more flour as needed until the dough comes together.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.
  5. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  6. After the dough has rested, roll it out on a lightly floured surface until it is about 1/8-inch thick.
  7. Cut the pasta into your desired shapes.
  8. Cook the pasta in a large pot of boiling salted water until al dente, about 2-3 minutes.
  9. Drain the pasta and serve immediately with your favorite sauce.

Tips:

  • If the dough is too dry, add a little more water, 1 tablespoon at a time.
  • If the dough is too wet, add a little more flour, 1 tablespoon at a time.
  • Don't overwork the dough, or it will become tough.
  • If you don't have a pasta machine, you can roll out the dough by hand. Just be sure to use a lot of flour to prevent the dough from sticking to the surface.
  • To cook the pasta, bring a large pot of salted water to a boil. Add the pasta and stir to prevent it from sticking together. Cook the pasta according to the package directions.
  • Drain the pasta and serve immediately with your favorite sauce.
