How to Make Fresh Pasta

Making fresh pasta is a fun and rewarding experience. It's also not as difficult as you might think. With just a few simple ingredients and some basic kitchen tools, you can make fresh pasta at home that is better than anything you can buy in the store.
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup semolina flour
- 3 large eggs
- 1 teaspoon salt
Instructions:
- In a large bowl, whisk together the all-purpose flour and semolina flour.
- Make a well in the center of the flour mixture and add the eggs and salt.
- Using a fork, slowly whisk the eggs into the flour mixture, incorporating more flour as needed until the dough comes together.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- After the dough has rested, roll it out on a lightly floured surface until it is about 1/8-inch thick.
- Cut the pasta into your desired shapes.
- Cook the pasta in a large pot of boiling salted water until al dente, about 2-3 minutes.
- Drain the pasta and serve immediately with your favorite sauce.
Tips:
- If the dough is too dry, add a little more water, 1 tablespoon at a time.
- If the dough is too wet, add a little more flour, 1 tablespoon at a time.
- Don't overwork the dough, or it will become tough.
- If you don't have a pasta machine, you can roll out the dough by hand. Just be sure to use a lot of flour to prevent the dough from sticking to the surface.
- To cook the pasta, bring a large pot of salted water to a boil. Add the pasta and stir to prevent it from sticking together. Cook the pasta according to the package directions.
- Drain the pasta and serve immediately with your favorite sauce.
