Ingredients:

1 (2-pound) lamb shoulder roast, boneless and tied
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup red wine
1 cup beef broth

Instructions:

Preheat oven to 325 degrees F (165 degrees C).
Heat the olive oil in a large skillet over medium heat. Sear the lamb roast on all sides until browned.


Transfer the lamb roast to a roasting pan. Add the onion, garlic, thyme, salt, and pepper to the skillet. Cook for 5 minutes, or until the onion is softened.


Add the red wine and beef broth to the skillet. Bring to a boil, then pour over the lamb roast.
Cover the roasting pan and bake for 2 hours, or until the lamb is tender and cooked through.
Let the lamb rest for 15 minutes before carving.

Tips:


For a more flavorful lamb, marinate it in the red wine and beef broth for at least 30 minutes, or overnight.


If you don't have a roasting pan, you can cook the lamb roast in a large Dutch oven.
To make the lamb ahead of time, cook it according to the recipe instructions and then let it cool completely. 

Cover and refrigerate for up to 24 hours. When you're ready to serve, reheat the lamb in a preheated oven at 325 degrees F (165 degrees C) for 15-20 minutes, or until heated through.
