Malai chicken curry is a rich and creamy chicken curry that is popular in India and Pakistan. It is made with chicken that is marinated in yogurt, spices, and herbs, and then cooked in a creamy sauce made with milk, cream, and cashews. The curry is typically served with rice or naan bread.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon salt
  • 1/4 cup cashews, soaked in hot water for 30 minutes
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped cilantro

Instructions:

  1. In a large bowl, combine the chicken, yogurt, lemon juice, ginger garlic paste, garam masala powder, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well to coat the chicken. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
  2. Heat the oil in a large pot or Dutch oven over medium heat. Add the chicken and marinade and cook, stirring occasionally, until the chicken is browned on all sides.
  3. Add the cashews, milk, and heavy cream to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the chicken is cooked through and the sauce has thickened.
  4. Stir in the cilantro and serve hot with rice or naan bread.

Tips:

  • For a richer flavor, use whole milk instead of skim milk.
  • To make the curry even creamier, add 1/4 cup of butter or ghee to the pot along with the cashews and milk.
  • If you don't have cashews, you can use almonds or walnuts instead.
  • Adjust the amount of red chili powder to your liking.
  • Serve the curry with a dollop of yogurt and a sprinkle of cilantro for garnish.
